6 large eggs
1 cup cottage cheese (preferably 2% or full-fat)
1/2 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/4 cup chopped fresh spinach or herbs (like parsley or chives)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup optional add-ins (diced bell peppers, cooked bacon, ham, or sautéed mushrooms)
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin or line with silicone liners.
2. In a blender or large bowl, combine the eggs, cottage cheese, salt, and pepper. Blend or whisk until smooth and frothy.
3. Pour the egg mixture into a large bowl if blended, then stir in shredded cheeses, chopped spinach or herbs, and any additional mix-ins.
4. Fill each muffin cup about 3/4 full with the mixture.
5. Bake for 22–25 minutes until puffed, golden on top, and set in the center.
6. Let cool in the pan for 5 minutes, then gently remove and serve warm or store for later.
