6 large eggs

1 cup cottage cheese

2 cups fresh spinach, wilted and drained

1/2 cup shredded cheddar cheese

1/4 cup milk

1/2 small onion, chopped

1 garlic clove, minced

1/4 teaspoon salt

1/4 teaspoon black pepper

1/8 teaspoon nutmeg (optional)

1 tablespoon chopped chives (for garnish)


Instructions

1. Preheat your oven to 375°F (190°C).

2. Wilt the spinach in a skillet over medium heat, then squeeze out all moisture.

3. In the same pan, sauté onions until soft. Add garlic and cook for another minute.

5. Stir in spinach, onions, garlic, shredded cheese, salt, and pepper.
