Ingredients

1.5 pounds boneless skinless chicken thighs or breasts

6 tablespoons unsalted butter

4 cloves garlic minced

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 teaspoon smoked paprika

1 teaspoon red pepper flakes

2 tablespoons fresh parsley chopped

1 tablespoon olive oil

1 teaspoon salt

0.5 teaspoon black pepper

8 skewers wooden or metal


Instructions

1. Cut chicken into 1.5-inch chunks and pat dry.

2. In a saucepan, melt butter over low heat and stir in garlic, Dijon, paprika, red pepper flakes, lemon juice, parsley, salt, and pepper.

3. Let the butter mixture cool slightly.

4. Pour half the cowboy butter and olive oil over the chicken, toss to coat, and marinate for 30 minutes to 4 hours.

5. Thread chicken onto skewers, leaving slight gaps between pieces.

6. Preheat grill to medium-high heat and oil the grates.

7. Grill skewers 4–5 minutes per side, basting with remaining cowboy butter as they cook.

8. Check for doneness at 165°F internal temperature.

9. Remove from grill, brush with leftover cowboy butter, and sprinkle with fresh herbs if desired.
