Ingredients

  • 1 1/2 cups old-fashioned rolled oats
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups chocolate chips
  • 1 cup shredded coconut
  • 1 cup chopped nuts (pecans or walnuts)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, followed by the vanilla extract. Mix until combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture.
  5. Stir in the oats, chocolate chips, coconut, and nuts.
  6. Drop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are golden and the centers are set. Let them cool on the baking sheets for a couple of minutes, then transfer to wire racks to cool completely.
