Ingredients

8 oz linguine or spaghetti

1 tbsp olive oil

2 tbsp butter

10 oz cremini or baby bella mushrooms, sliced

3 cloves garlic, minced

1 cup grated Parmesan cheese

1/2 cup reserved pasta water

Salt, to taste

Black pepper, to taste

2 tbsp chopped fresh parsley


Instructions

1. Bring a large pot of salted water to a boil and cook the pasta until al dente. Reserve 1 cup of the pasta water before draining.

2. In a large skillet over medium-high heat, heat the olive oil and butter. Add sliced mushrooms and cook undisturbed for 5–7 minutes until browned, then stir and cook another few minutes until tender.

3. Reduce heat to medium, add minced garlic, and sauté for 30 seconds to 1 minute until fragrant. Season with salt and pepper.

4. Add the cooked pasta to the skillet with the mushrooms. Toss together, gradually adding the reserved pasta water to help create a light sauce.

5. Remove from heat, stir in grated Parmesan cheese until melted and combined.

6. Sprinkle chopped parsley over the top, toss, and adjust seasoning if needed. Serve immediately.

Use freshly grated Parmesan cheese for the best melt and flavor.
