- 1/2 lb medium shrimp, peeled and deveined

- 2 garlic cloves, minced
- 1 celery stalk, finely chopped
- 1 small carrot, grated
- 1/4 cup dry white wine (optional)
- 2 cups seafood stock (or chicken stock)
- 1 cup heavy cream
- 1/2 cup whole milk
- 2 tablespoons tomato paste
- 2 tablespoons all-purpose flour
- 1 teaspoon paprika (smoked preferred)
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon dried thyme
- Salt and freshly cracked black pepper, to taste

Instructions
- Heat butter and olive oil in a heavy-bottomed pot over medium heat.
- Add onion, garlic, celery, and carrot. Sauté until softened (about 5–6 minutes).
- Stir in tomato paste, paprika, cayenne, and thyme. Cook for 2–3 minutes.
- Sprinkle in flour and stir constantly for 1–2 minutes to form a roux.
- Deglaze with white wine (if using), scraping up any browned bits.
