Ingredients

  • 2 boneless skinless chicken breasts or thighs
  • 68 cups chicken broth (low sodium or homemade)
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons unsalted butter (softened)
  • 3/4 cup whole milk
  • Optional: diced celery and onion for extra broth flavor
  • Salt & pepper to taste

Instructions

  1. In a large pot, add chicken and cover with broth. Bring to a boil, then reduce heat and simmer for 20–25 minutes until fully cooked.
  2. Remove chicken, shred it, and set aside. Keep broth simmering.
  3. In a bowl, mix flour, baking powder, and salt. Cut in butter, then stir in milk to form a soft dough.
  4. On a floured surface, roll dough to 1/8–1/4 inch thick. Cut into strips or squares.
  5. Drop dumplings into simmering broth one at a time. Stir gently.
  6. Simmer uncovered for 15–20 minutes, until dumplings are tender.
  7. Add shredded chicken back to the pot. Simmer an additional 5–10 minutes. Season with salt and pepper to taste.
  8. Serve warm and enjoy!
