Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cream cheese, softened
  • 1/2 cup cooked bacon bits
  • 3/4 cup shredded cheddar cheese
  • 2 cups crushed Doritos (Nacho Cheese flavor recommended)
  • 2 large eggs, beaten
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or grease lightly.
  2. Butterfly each chicken breast and pound flat to about 1/4 inch thickness.
  3. In a bowl, mix cream cheese, bacon bits, and shredded cheddar until well combined.
  4. Place a generous spoonful of the filling in the center of each chicken piece and roll tightly. Secure with toothpicks if needed.
  5. Set up three shallow bowls: one with flour mixed with salt and pepper, one with beaten eggs, and one with crushed Doritos.
  6. Dredge each chicken roll in flour, dip in egg, and coat with crushed Doritos.
  7. Place on the prepared baking sheet and lightly spray the tops with cooking spray.
  8. Bake for 25–30 minutes, or until chicken is cooked through and coating is golden brown.
  9. Let rest for 5 minutes before serving.
