Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup cream cheese, softened
- 1/2 cup cooked bacon bits
- 3/4 cup shredded cheddar cheese
- 2 cups crushed Doritos (Nacho Cheese flavor recommended)
- 2 large eggs, beaten
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray (optional)
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or grease lightly.
- Butterfly each chicken breast and pound flat to about 1/4 inch thickness.
- In a bowl, mix cream cheese, bacon bits, and shredded cheddar until well combined.
- Place a generous spoonful of the filling in the center of each chicken piece and roll tightly. Secure with toothpicks if needed.
- Set up three shallow bowls: one with flour mixed with salt and pepper, one with beaten eggs, and one with crushed Doritos.
- Dredge each chicken roll in flour, dip in egg, and coat with crushed Doritos.
- Place on the prepared baking sheet and lightly spray the tops with cooking spray.
- Bake for 25–30 minutes, or until chicken is cooked through and coating is golden brown.
- Let rest for 5 minutes before serving.
