4 boneless skinless chicken breasts
2 tablespoons olive oil or butter

1 small onion finely chopped
1/2 red bell pepper diced
3 cloves garlic minced
8 oz cream cheese softened
3/4 cup chicken broth
1/4 cup heavy cream
1/4 cup grated Parmesan cheese
Fresh parsley for garnish
Instructions
1. Pat chicken breasts dry and season with salt, pepper, garlic powder, and smoked paprika. Sear in oil over medium-high heat until golden brown on both sides. Remove and set aside.
2. In the same pan, sauté onion and red bell pepper until softened. Add minced garlic and cook for 30 seconds more.
3. Lower heat and add cream cheese. Stir until melted, then gradually mix in chicken broth and heavy cream. Add Parmesan and stir until smooth.
4. Return chicken to the skillet. Cover and let simmer on low heat for 10–12 minutes, or until fully cooked (165°F internal temp).
