12 oz linguine pasta

1.5 lbs boneless chicken thighs

1.5 cups shredded mozzarella cheese

1/3 cup freshly grated Parmesan cheese

Salt and pepper, to taste

2 tablespoons chopped fresh parsley


Instructions

1. Bring a large pot of salted water to a boil. Cook linguine until al dente. Drain and set aside, reserving ½ cup of pasta water.

2. Pat chicken dry and season both sides with Cajun seasoning, salt, and pepper.

3. Heat olive oil in a skillet over medium-high heat. Sear chicken for 5–6 minutes per side until fully cooked. Remove and let rest, then slice.

4. In the same pan, reduce heat to medium. Add butter and sauté garlic for 30 seconds.

5. Stir in heavy cream and bring to a gentle simmer.

6. Add mozzarella and Parmesan, stirring until cheese melts and sauce is smooth.

7. Add cooked linguine to the sauce and toss to coat. Add reserved pasta water if needed.

8. Top with sliced chicken and sprinkle with parsley. Optional: broil with extra mozzarella for 1–2 minutes.
