2 eggs
1½ cups panko breadcrumbs

8 ounces rotini pasta
1½ cups heavy cream
1½ cups shredded mozzarella cheese
2 cloves garlic, minced
½ teaspoon salt (plus more to taste)
½ teaspoon black pepper
2 tablespoons chopped parsley (for garnish)
¼ cup reserved pasta water (as needed)
Instructions
1. Slice chicken breasts horizontally to create thin cutlets and pat dry with paper towels.
2. Season chicken on both sides with Cajun seasoning, salt, and pepper.
3. Set up a breading station with flour, beaten eggs, and panko. Dredge each piece in flour, then egg, then breadcrumbs.
