Ingredients
- 12 oz penne pasta
 - 2 large chicken breasts, diced
 - 1 1/2 tablespoons Cajun seasoning
 - 1 tablespoon olive oil
 - 1 cup heavy cream
 - 1 oz dry ranch dressing mix (about 2 tablespoons)
 - 1 1/2 cups shredded mozzarella cheese
 - 2 cloves garlic, minced (optional)
 - Chopped parsley or green onion, for garnish
 
Instructions
- Bring a large pot of salted water to a boil. Cook penne pasta according to package directions until al dente. Drain and reserve 1/2 cup of pasta water.
 - While pasta cooks, toss diced chicken with Cajun seasoning.
 - Heat olive oil in a large skillet over medium-high heat. Add chicken and sear 3-4 minutes per side until cooked through. Remove chicken and set aside.
 - In the same skillet, reduce heat to medium and add heavy cream and ranch mix. Stir to combine and simmer for 2-3 minutes.
 - Add mozzarella and stir until melted and smooth.
 - Return chicken to skillet, add cooked pasta, and toss to coat everything evenly. If sauce is too thick, add a bit of the reserved pasta water.
 - Taste and adjust seasoning if needed. Garnish with parsley or green onion before serving.
