Ingredients

  • 12 oz penne pasta
  • 2 large chicken breasts, diced
  • 1 1/2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1 oz dry ranch dressing mix (about 2 tablespoons)
  • 1 1/2 cups shredded mozzarella cheese
  • 2 cloves garlic, minced (optional)
  • Chopped parsley or green onion, for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Cook penne pasta according to package directions until al dente. Drain and reserve 1/2 cup of pasta water.
  2. While pasta cooks, toss diced chicken with Cajun seasoning.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and sear 3-4 minutes per side until cooked through. Remove chicken and set aside.
  4. In the same skillet, reduce heat to medium and add heavy cream and ranch mix. Stir to combine and simmer for 2-3 minutes.
  5. Add mozzarella and stir until melted and smooth.
  6. Return chicken to skillet, add cooked pasta, and toss to coat everything evenly. If sauce is too thick, add a bit of the reserved pasta water.
  7. Taste and adjust seasoning if needed. Garnish with parsley or green onion before serving.
