Description
A rich and satisfying pasta dish with bold Cajun flavors, tender sausage, and a velvety cream sauce. Perfect for weeknight dinners or cozy gatherings.
Ingredients
- 12 oz fettuccine or linguine pasta
- 12 oz smoked sausage, sliced into 1/4” rounds
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1/2 cup chicken broth
- 1 tbsp Cajun seasoning (adjust to taste)
- 1/2 cup grated Parmesan cheese
- Salt and black pepper, to taste
Optional:
- 1 cup baby spinach or chopped kale
- Red pepper flakes
- Fresh chopped parsley
- Lemon juice or zest
Instructions
- Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1/2 cup pasta water and drain the rest.
- In a large skillet, heat olive oil over medium-high heat. Add sausage and sear until browned on both sides. Remove and set aside.
- In the same skillet, lower heat to medium. Add minced garlic and sauté for 30 seconds.
- Deglaze with chicken broth, scraping the bottom of the pan.
- Stir in the heavy cream and Cajun seasoning. Simmer 4–5 minutes until slightly thickened.
- Add Parmesan cheese, stirring until melted. Use reserved pasta water as needed to adjust consistency.
- Return pasta and sausage to the pan. Toss to combine and heat through, 2–3 minutes.
- Garnish with parsley, black pepper, and optional red pepper flakes or lemon juice. Serve hot.
