Creamy Cajun Sausage Pasta

A rich and satisfying pasta dish with bold Cajun flavors, tender sausage, and a velvety cream sauce. Perfect for weeknight dinners or cozy gatherings.


Ingredients

  • 12 oz fettuccine or linguine pasta
  • 12 oz smoked sausage, sliced into 1/4” rounds
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1/2 cup chicken broth
  • 1 tbsp Cajun seasoning (adjust to taste)
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper, to taste

Optional:

  • 1 cup baby spinach or chopped kale
  • Red pepper flakes
  • Fresh chopped parsley
  • Lemon juice or zest

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1/2 cup pasta water and drain the rest.
  2. In a large skillet, heat olive oil over medium-high heat. Add sausage and sear until browned on both sides. Remove and set aside.
  3. In the same skillet, lower heat to medium. Add minced garlic and sauté for 30 seconds.
  4. Deglaze with chicken broth, scraping the bottom of the pan.
  5. Stir in the heavy cream and Cajun seasoning. Simmer 4–5 minutes until slightly thickened.
  6. Add Parmesan cheese, stirring until melted. Use reserved pasta water as needed to adjust consistency.
  7. Return pasta and sausage to the pan. Toss to combine and heat through, 2–3 minutes.
  8. Garnish with parsley, black pepper, and optional red pepper flakes or lemon juice. Serve hot.
