Ingredients

  • 2 large boneless, skinless chicken breasts (about 1.5 lbs)
  • 5 oz fresh spinach (or 1 cup thawed frozen spinach, squeezed dry)
  • 4 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 medium onion, chopped
  • 1 tbsp butter
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a medium baking dish.
  2. Season chicken with salt and pepper. Cook in olive oil over medium heat until done, then cut into bite-sized pieces.
  3. In the same pan, melt butter. Sauté onion until translucent, add garlic and cook 1 minute.
  4. Add spinach and cook until wilted. Set aside.
  5. Stir in cream cheese and heavy cream. Cook on low until smooth.
  6. Mix in Parmesan cheese and season with salt and pepper.
  7. Add chicken and spinach mixture into the sauce. Stir to combine.
  8. Transfer to baking dish. Top with mozzarella and extra Parmesan.
  9. Bake for 20-25 minutes until golden and bubbly.
  10. Let sit 5-10 minutes before serving.
