Ingredients
For the Chicken:
- 2 large boneless, skinless chicken breasts (or 4 small ones)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 tablespoon olive oil
- 1 tablespoon butter
For the Boursin Sauce:
- 1 clove garlic, minced (optional)
- 1/2 cup chicken broth (or white wine)
- 1 package (5.2 oz) Boursin Cheese with Garlic & Fine Herbs
- 1/2 cup heavy cream
- 1 teaspoon Dijon mustard
- 1/2 teaspoon dried or fresh thyme
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Prepare the Chicken: Pat the chicken dry with paper towels and season both sides with salt, pepper, and paprika.
- Sear the Chicken: Heat olive oil and butter in a skillet over medium-high heat. Cook the chicken for 5-6 minutes per side until golden brown and cooked through. Remove and set aside.
- Make the Sauce: Lower the heat to medium and sauté garlic (if using) for 30 seconds. Deglaze the pan with chicken broth, scraping up any browned bits.
- Melt the Boursin Cheese: Add the Boursin cheese, heavy cream, and Dijon mustard. Stir until smooth and creamy. Add thyme and let the sauce simmer for 2-3 minutes.
- Return the Chicken to the Pan: Place the chicken back in the skillet, spoon the sauce over it, and let simmer for 2 more minutes.
- Garnish and Serve: Sprinkle with fresh parsley and serve with your favorite side dishes.
