Ingredients
- 2 boneless, skinless chicken breasts
- 8 oz spaghetti noodles (uncooked)
- 8 oz cream cheese (cubed)
- 1 1/2 cups shredded cheddar cheese
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10 oz) Rotel (diced tomatoes with green chilies)
- 2 cups chicken broth
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- Fresh parsley (optional, for garnish)
Instructions
- Place the chicken breasts in the crockpot and season with garlic powder, onion powder, paprika, salt, and black pepper.
- Add cream of chicken soup, Rotel, and chicken broth. Stir to combine.
- Cover and cook on low for 6 hours or high for 3–4 hours, until the chicken is tender.
- Shred the chicken with two forks and mix it into the sauce.
- Add cubed cream cheese and shredded cheddar. Stir until the cheese starts to melt.
- Break the spaghetti in half and stir it into the crockpot, ensuring it is submerged in the sauce.
- Cover and cook for 20–30 minutes, stirring occasionally, until the pasta is tender.
- Stir well, garnish with fresh parsley, and serve hot!
