Description
This rich and comforting mashed potato dish is elevated with sweet roasted garlic and a fresh herb finish. It’s creamy, flavorful, and makes the perfect companion for nearly any meal—from cozy family dinners to special holiday feasts.
Ingredients
- 3 lbs Yukon Gold potatoes, peeled and chopped
- 2 whole garlic bulbs
- 1/4 cup olive oil (for roasting garlic)
- 1/2 cup unsalted butter, softened
- 3/4 cup heavy cream, warmed
- 1/4 cup chopped fresh parsley or chives
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat oven to 400°F (200°C). Slice tops off garlic bulbs, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes. Let cool and squeeze out softened cloves.
- Meanwhile, place peeled and chopped potatoes in a large pot. Cover with cold water and add salt. Bring to a boil and cook until fork-tender, about 15–20 minutes.
- Drain potatoes and return to the hot pot. Let them steam-dry for 3–5 minutes.
- Add roasted garlic, butter, and half the cream. Mash until smooth, gradually adding remaining cream as needed.
- Stir in chopped herbs, season with salt and pepper to taste.
- Serve warm, optionally garnished with more herbs and a pat of butter.
