Creamy Garlic and Herb Mashed Potatoes

Description

This rich and comforting mashed potato dish is elevated with sweet roasted garlic and a fresh herb finish. It’s creamy, flavorful, and makes the perfect companion for nearly any meal—from cozy family dinners to special holiday feasts.


Ingredients

  • 3 lbs Yukon Gold potatoes, peeled and chopped
  • 2 whole garlic bulbs
  • 1/4 cup olive oil (for roasting garlic)
  • 1/2 cup unsalted butter, softened
  • 3/4 cup heavy cream, warmed
  • 1/4 cup chopped fresh parsley or chives
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Slice tops off garlic bulbs, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes. Let cool and squeeze out softened cloves.
  2. Meanwhile, place peeled and chopped potatoes in a large pot. Cover with cold water and add salt. Bring to a boil and cook until fork-tender, about 15–20 minutes.
  3. Drain potatoes and return to the hot pot. Let them steam-dry for 3–5 minutes.
  4. Add roasted garlic, butter, and half the cream. Mash until smooth, gradually adding remaining cream as needed.
  5. Stir in chopped herbs, season with salt and pepper to taste.
  6. Serve warm, optionally garnished with more herbs and a pat of butter.
