Ingredients
- 2 boneless skinless chicken breasts
- 12 oz rigatoni pasta
- 4 cloves garlic, minced
- 3 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Bring a large pot of salted water to a boil. Cook rigatoni until al dente. Reserve 1 cup of pasta water, then drain.
- Season chicken breasts with salt, pepper, and Italian seasoning.
- In a large skillet, heat olive oil over medium-high heat. Sear chicken for 4–5 minutes per side until golden and cooked through. Remove and rest before slicing.
- Lower heat and melt butter in the same skillet. Add minced garlic and cook for 30 seconds until fragrant.
- Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until smooth.
- Slice chicken and return to skillet with rigatoni. Toss everything together. Add pasta water as needed to loosen the sauce.
- Garnish with fresh parsley and extra Parmesan if desired. Serve immediately.
