Ingredients

2 chicken breasts

8 oz cremini mushrooms, sliced

4 cloves garlic, minced

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese

2 tablespoons butter

1 tablespoon olive oil

8 oz fettuccine pasta

1/2 cup chicken broth

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons chopped fresh parsley


Instructions

1. Bring a large pot of salted water to a boil. Add fettuccine and cook until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

2. In a large skillet, heat olive oil over medium-high. Season chicken with salt and pepper, then cook until golden and cooked through, about 6–8 minutes. Remove and set aside.

3. In the same skillet, melt butter. Add mushrooms and cook until browned and tender, about 5–6 minutes.

4. Add minced garlic and sauté for 1 minute until fragrant.

5. Pour in chicken broth and deglaze the pan, scraping up browned bits. Simmer for 2 minutes.

6. Stir in heavy cream and bring to a gentle simmer for 3–4 minutes. Add Parmesan and stir until smooth.

7. Return chicken to the skillet and stir. Add pasta and toss to coat. Add pasta water if needed to thin sauce.

8. Taste and adjust salt and pepper. Garnish with parsley and extra Parmesan. Serve hot.

Notes

Use freshly grated Parmesan to avoid a grainy sauce.

Warm your cream before adding it to help it blend smoothly.

Don’t skip deglazing the pan—those browned bits add huge flavor.
