Description
A rich and comforting pasta dish featuring tender seared chicken breast over rotini pasta, smothered in a creamy garlic parmesan sauce. It’s weeknight-easy yet indulgent enough for entertaining.
Ingredients
- 2 boneless, skinless chicken breasts
- 8 oz rotini pasta
- 2 tablespoons butter (divided)
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup freshly grated parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- Fresh parsley (optional, for garnish)
Instructions
- Season chicken with salt, pepper, and Italian seasoning.
- Heat 1 tablespoon butter in a skillet over medium-high heat. Sear chicken for 5–6 minutes per side until cooked through. Remove and rest.
- Boil pasta in salted water until al dente. Reserve 1/2 cup pasta water, then drain.
- In the same skillet, melt the remaining tablespoon of butter. Add garlic and sauté for 30 seconds.
- Pour in heavy cream and simmer gently.
- Stir in parmesan cheese until melted and smooth.
- Add cooked pasta to the sauce, tossing to coat. Use reserved pasta water as needed to loosen sauce.
- Slice chicken and serve over the pasta. Garnish with fresh parsley if desired.
