Ingredients

500g large shrimp, peeled and deveined

3 tbsp unsalted butter

3 cloves garlic, minced

1 tbsp olive oil

1 tsp paprika

0.5 tsp chili flakes (optional)

Salt and freshly ground black pepper, to taste

Juice of 0.5 lemon

1 cup long-grain white rice (jasmine or basmati)

2 cups chicken or vegetable broth

2 tbsp heavy cream (or coconut cream)

2 tbsp unsalted butter

0.25 cup fresh parsley, chopped

2 tbsp fresh cilantro, chopped

1 tbsp fresh chives, chopped

Salt, to taste

Cherry tomatoes, halved

Fresh cilantro or parsley leaves, for garnish

Lemon wedges


Instructions

1. Rinse the rice under cold water until clear. In a saucepan, bring broth to a boil, add rice, reduce heat, cover, and cook for 12–15 minutes until tender. Turn off heat and steam for 5 minutes.

2. Heat butter and olive oil in a skillet over medium-low. Add garlic and cook 1–2 minutes until fragrant, without burning.

3. Pat shrimp dry, season with paprika, chili flakes, salt, and pepper. Increase skillet heat to medium-high, add shrimp in a single layer, and cook 2–3 minutes per side. Squeeze lemon juice, toss, and remove from heat.

4. Fluff the rice, stir in butter, cream, parsley, cilantro, and chives. Season with salt to taste.

5. Assemble bowls with creamy herb rice, shrimp, cherry tomatoes, and garnish with herbs and lemon wedges.
