Ingredients

For the Salmon:

  • 4 salmon fillets (about 6 oz each)
  • Salt and freshly ground black pepper
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter

For the Sauce:

  • 2 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1/3 cup chicken broth (or water)
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp Dijon mustard
  • 1/4 tsp crushed red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley or dill

Optional Garnish:

  • Lemon wedges
  • Additional herbs like thyme or chives

Instructions

  1. Pat salmon fillets dry and season with salt and pepper. Let rest at room temperature for 10 minutes.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Sear the salmon fillets (skin-side down if applicable) for 4–5 minutes without moving. Flip and cook another 3–4 minutes. Remove and set aside.
  4. In the same skillet, melt 2 tbsp butter. Add minced garlic and sauté until fragrant.
  5. Pour in broth to deglaze the pan. Add cream, lemon juice, zest, mustard, and red pepper flakes. Whisk to combine.
  6. Simmer sauce for 3–5 minutes over low heat until slightly thickened.
  7. Return salmon to the skillet and spoon sauce over fillets. Simmer for 2–3 minutes.
  8. Sprinkle with chopped herbs and serve hot with lemon wedges.
