12 oz rotini pasta

1 lb ground beef

1 tbsp olive oil

0.5 medium onion, finely diced

2 cloves garlic, minced

1.5 tbsp Cajun seasoning

0.5 tsp smoked paprika

0.25 tsp chili flakes (optional)

Salt and pepper to taste

0.5 cup red bell pepper, diced

8 oz Velveeta cheese, cubed

0.75 cup milk

1.5 cups shredded mozzarella cheese

Fresh parsley, chopped (for garnish)


Instructions

1. Boil rotini pasta in salted water until al dente. Drain and set aside.

2. In a skillet, heat olive oil. Sauté onions and bell pepper for 3 minutes. Add garlic and cook until fragrant.

3. Add ground beef and cook until browned. Drain excess fat.

4. Stir in Cajun seasoning, smoked paprika, chili flakes (if using), and salt and pepper. Cook for 2–3 more minutes.

5. Reduce heat to low. Add Velveeta cheese and milk. Stir constantly until smooth and creamy.

6. Add cooked rotini to the skillet. Toss everything together until pasta is fully coated.

7. Sprinkle mozzarella on top. Cover skillet or broil for 1–2 minutes until cheese is melted and bubbly.

8. Garnish with chopped parsley and serve hot.

Notes

Freshly shredded mozzarella melts smoother than pre-packaged varieties.

Let the pasta rest for 2–3 minutes before serving so the sauce thickens and clings better.
