1 lb Italian sausage
1 tablespoon olive oil
1 small yellow onion, finely diced
2 medium carrots, peeled and diced
2 ribs celery, diced
3 cloves garlic, minced
4 cups chicken broth
1 cup ditalini pasta
1 cup heavy cream
0.75 cup freshly grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and freshly ground black pepper, to taste
1 tablespoon fresh parsley, chopped (optional)
Crushed red pepper flakes (optional)
Instructions
1. Heat olive oil in a large pot over medium-high heat and brown the sausage, breaking it apart with a spoon until fully cooked. Remove with a slotted spoon and set aside.
2. In the same pot, sauté onion, carrots, and celery for 5–6 minutes until softened. Stir in garlic and cook for another minute.
3. Return sausage to the pot and pour in chicken broth. Add Italian seasoning and bring to a simmer for 10–15 minutes.
4. Stir in the ditalini pasta and cook for 8–10 minutes until pasta is al dente.
