- 12 oz penne pasta
- 2 boneless, skinless chicken breasts (sliced thin)
- 1 tablespoon Cajun seasoning (plus more to taste)
- Salt and black pepper to taste
- 1 tablespoon olive oil or butter
- 1 red bell pepper (sliced)
- 1/2 onion (sliced)
- 2 garlic cloves (minced)
- 1 cup heavy cream
- 1 1/2 cups shredded Monterey Jack or Pepper Jack cheese
- Optional: Fresh parsley or green onions for garnish
Instructions
- Cook penne pasta in salted boiling water until al dente. Drain and reserve 1/2 cup of pasta water.
- Season sliced chicken with Cajun seasoning, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken until golden and fully cooked. Remove and set aside.
- In the same skillet, sauté onions and bell peppers until soft, about 6–8 minutes. Add garlic in the last minute.
- Reduce heat to medium-low. Add heavy cream and simmer for 2–3 minutes.
- Stir in cheese and mix until melted into a smooth sauce.
- Return chicken to the skillet along with cooked pasta. Toss to combine. Add reserved pasta water as needed.
- Taste and adjust seasoning. Garnish with parsley or green onions. Serve hot.
