Ingredients

  • 12 oz penne pasta
  • 2 boneless, skinless chicken breasts (sliced thin)
  • 1 tablespoon Cajun seasoning (plus more to taste)
  • Salt and black pepper to taste
  • 1 tablespoon olive oil or butter
  • 1 red bell pepper (sliced)
  • 1/2 onion (sliced)
  • 2 garlic cloves (minced)
  • 1 cup heavy cream
  • 1 1/2 cups shredded Monterey Jack or Pepper Jack cheese
  • Optional: Fresh parsley or green onions for garnish

Instructions

  1. Cook penne pasta in salted boiling water until al dente. Drain and reserve 1/2 cup of pasta water.
  2. Season sliced chicken with Cajun seasoning, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Cook chicken until golden and fully cooked. Remove and set aside.
  4. In the same skillet, sauté onions and bell peppers until soft, about 6–8 minutes. Add garlic in the last minute.
  5. Reduce heat to medium-low. Add heavy cream and simmer for 2–3 minutes.
  6. Stir in cheese and mix until melted into a smooth sauce.
  7. Return chicken to the skillet along with cooked pasta. Toss to combine. Add reserved pasta water as needed.
  8. Taste and adjust seasoning. Garnish with parsley or green onions. Serve hot.
