- 6 large tomatoes, chopped (or 2 cans of whole peeled tomatoes)
- 2 cups vegetable broth
- 1 cup heavy cream
- 1/4 cup fresh basil leaves, chopped
- 1 teaspoon sugar
- Salt and pepper to taste
- 1/2 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- Fresh basil leaves (for garnish)
- Drizzle of cream (optional)
Instructions
- Sauté the Aromatics: In a large pot, heat the olive oil and butter over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Stir in the garlic and cook for another minute until fragrant.
- Cook the Tomatoes: Add the chopped tomatoes, oregano, salt, pepper, and sugar. Stir well and let simmer for 15-20 minutes until the tomatoes break down.
- Blend the Soup: Remove the pot from heat. Using an immersion blender, blend the soup until smooth. If using a traditional blender, blend in small batches to avoid spills.
- Add Cream and Basil: Return the blended soup to the pot. Stir in the heavy cream and fresh basil. Simmer for 5 minutes to enhance the flavor.
