Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 6 large tomatoes, chopped (or 2 cans of whole peeled tomatoes)
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1/4 cup fresh basil leaves, chopped
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh basil leaves (for garnish)
  • Drizzle of cream (optional)

Instructions

  1. Sauté the Aromatics: In a large pot, heat the olive oil and butter over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Stir in the garlic and cook for another minute until fragrant.
  2. Cook the Tomatoes: Add the chopped tomatoes, oregano, salt, pepper, and sugar. Stir well and let simmer for 15-20 minutes until the tomatoes break down.
  3. Blend the Soup: Remove the pot from heat. Using an immersion blender, blend the soup until smooth. If using a traditional blender, blend in small batches to avoid spills.
  4. Add Cream and Basil: Return the blended soup to the pot. Stir in the heavy cream and fresh basil. Simmer for 5 minutes to enhance the flavor.
  5. Serve and Garnish: Ladle the soup into bowls. Drizzle with additional cream and garnish with fresh basil leaves and cracked black pepper.
