Ingredients

2 chicken breasts

9 oz cheese tortellini

1 cup heavy cream

1 cup chicken broth

3 cloves garlic, minced

1/2 cup sun-dried tomatoes, chopped

1/2 cup parmesan cheese, grated

2 cups baby spinach

2 tbsp olive oil

1 tsp salt

1/2 tsp black pepper

1 tsp Italian seasoning


Instructions

1. Season chicken breasts with salt, pepper, and Italian seasoning.

2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken until golden and fully cooked, about 5–6 minutes per side. Remove and let rest.

3. In the same skillet, reduce heat slightly and sauté minced garlic for 30 seconds.

4. Add chopped sun-dried tomatoes and cook for 1 minute.

5. Pour in chicken broth and scrape up any brown bits from the pan. Stir in heavy cream and bring to a gentle simmer. Cook for 3–4 minutes until slightly thickened.

6. Add cheese tortellini to the pan. Cook according to package directions, usually 4–6 minutes.

7. Stir in baby spinach until wilted.

8. Add grated parmesan cheese gradually, stirring until fully melted and the sauce is smooth.

9. Slice the rested chicken and return it to the skillet. Stir to combine.
