Ingredients

lbs boneless, skinless chicken thighs or breasts

2 tbsp olive oil

1 tsp paprika

1 tsp garlic powder

1 tsp onion powder

½ tsp cayenne pepper

Salt and black pepper to taste

12 oz fettuccine pasta

Salted water for boiling

2 tbsp unsalted butter

4 cloves garlic, grated or finely minced

1½ cups heavy cream

8 oz Velveeta cheese, cubed

¼ cup grated Parmesan cheese

1 tsp Italian seasoning

½ tsp cracked black pepper

Salt to taste

¼ cup fresh parsley, chopped

1 cup baby spinach

¼ tsp red pepper flakes

½ tsp lemon zest


Instructions

1. Pat chicken dry and season with olive oil, paprika, garlic powder, onion powder, cayenne, salt, and pepper. Rub well to coat.

2. In a large skillet, cook chicken over medium-high heat for 5–6 minutes per side until golden and cooked through (165°F internal temp). Set aside to rest.

3. Boil fettuccine in a large pot of salted water until al dente. Reserve ½ cup pasta water, then drain.

4. In the same skillet, melt butter and sauté garlic for 30 seconds.

5. Add heavy cream and stir until warm. Add Velveeta cubes and stir until fully melted.

6. Stir in Parmesan, Italian seasoning, black pepper, and salt. Add parsley.

7. Toss fettuccine into the sauce. Use reserved pasta water as needed to loosen.

8. Slice chicken and serve over pasta. Garnish with parsley and more Parmesan.

Notes

Let chicken rest before slicing to lock in its juices and keep it tender.
