12 oz linguine pasta
2 boneless skinless chicken breasts
1 tablespoon olive oil
1 tablespoon butter
3 cloves garlic minced
1 cup heavy cream
8 oz Velveeta cheese cubed
1 cup shredded mozzarella cheese
½ teaspoon salt
¼ teaspoon black pepper
⅛ teaspoon red pepper flakes optional
2 tablespoons fresh parsley chopped
Reserved pasta water as needed
Instructions
1. Bring a large pot of salted water to a boil. Cook linguine until al dente, then drain and reserve ½ cup of pasta water.
2. Pound chicken breasts to even thickness. Season both sides with salt and pepper.
