Ingredients

1 large head cauliflower, cut into bite-sized florets

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

0.5 teaspoon ground turmeric

0.5 teaspoon salt

0.25 teaspoon black pepper

1 tablespoon cornstarch

0.5 cup plain Greek yogurt

2 tablespoons mayonnaise

1 tablespoon lemon juice

2 garlic cloves, minced

1 tablespoon chopped parsley

Salt and pepper to taste

2 tablespoons water


Instructions

1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone baking mat. Cut the cauliflower into uniform, bite-sized florets and pat them dry thoroughly using a kitchen towel.

2. Place the cauliflower in a large mixing bowl. Drizzle with olive oil and toss to coat evenly. Sprinkle in the garlic powder, smoked paprika, turmeric, salt, black pepper, and cornstarch. Toss again until every piece is well-coated.

3. Spread the seasoned cauliflower in a single layer on the prepared baking sheet, leaving space between each floret. Bake for 25–30 minutes, flipping halfway through, until golden brown and crispy at the edges.

4. While the cauliflower bakes, combine the yogurt, mayonnaise, lemon juice, minced garlic, and parsley in a bowl. Whisk until smooth. Add a little water to thin the sauce if needed. Season with salt and pepper to taste.

5. Once the cauliflower is crispy and browned, remove it from the oven. Let it cool for a few minutes, then drizzle with the garlic sauce or serve it on the side for dipping. Garnish with fresh parsley if desired.

Notes

Make sure the cauliflower is completely dry before seasoning—it’s key to getting that roasted crisp.

Don’t overcrowd the pan. Give each floret breathing room for better browning.

The garlic sauce can be made ahead and stored for up to 3 days in the fridge.
