Ingredients
1 lb chicken breast
2 tbsp Cajun seasoning

1 tbsp olive oil
8 oz rotini pasta
1 cup roasted corn kernels
2 tbsp butter
1 cup heavy cream
¾ cup freshly grated Parmesan cheese
2 tbsp chopped fresh parsley
Salt to taste
Black pepper to taste
Instructions
1. Cut the chicken breast into bite-sized pieces and toss with Cajun seasoning, paprika, garlic powder, salt, pepper, and olive oil. Let sit for 10 minutes.
2. In a hot skillet, cook chicken pieces until golden and crisp on all sides, about 8–10 minutes. Set aside.
3. Boil the rotini pasta in salted water until al dente, about 8–9 minutes. Drain and reserve ½ cup of pasta water.
4. In another pan, melt butter over medium heat. Add garlic powder and a bit of Cajun seasoning. Stir in the heavy cream.
5. Let the cream simmer for 2–3 minutes. Slowly add Parmesan cheese and roasted corn. Stir until melted and thickened.
6. Add drained pasta to the sauce and stir to coat. Use reserved pasta water if needed to loosen the sauce.
7. Taste and adjust seasoning with salt and pepper.
8. Plate pasta and top with crispy chicken bites. Garnish with fresh parsley and extra Cajun seasoning if desired.
