Ingredients
2 cups corn kernels (fresh or thawed from frozen)
3/4 cup all-purpose flour
1 teaspoon baking powder
2 large eggs
1/3 cup milk
1/2 cup shredded cheddar cheese
1/3 cup chopped green onions
1/2 teaspoon salt
1/4 teaspoon black pepper
Oil for frying
Instructions
1. If using fresh corn, slice kernels from the cob. If using frozen, thaw and pat dry thoroughly. Finely chop green onions and set aside.
2. In a large bowl, combine flour, baking powder, salt, and pepper.
3. In a separate bowl, whisk the eggs and mix in the milk.
4. Pour the wet mixture into the dry ingredients and stir until just combined.
5. Fold in the corn, green onions, and shredded cheese.
6. Heat a skillet over medium heat and add enough oil to coat the bottom.
7. Drop 1/4 cup of batter into the skillet and flatten slightly.
8. Cook each fritter for 2–3 minutes per side until golden and crisp.
9. Transfer to a paper towel-lined plate to drain excess oil.
10. Serve hot with sour cream, green onions, or your favorite sauce.
