Ingredients

  • 4 large russet potatoes, cut into wedges
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika (optional)
  • Salt and freshly ground black pepper, to taste
  • ½ cup freshly grated parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Soak potato wedges in cold water for 20–30 minutes. Drain and pat dry thoroughly.
  3. In a large bowl, toss wedges with olive oil, garlic, onion powder, Italian seasoning, smoked paprika, salt, and pepper.
  4. Add half of the parmesan and toss again.
  5. Arrange wedges in a single layer on the baking sheet, skin side down.
  6. Bake for 25–30 minutes, flipping halfway through, until golden and crisp.
  7. Remove from oven, sprinkle with remaining parmesan and fresh parsley.
  8. Serve immediately with your favorite dipping sauce.
