Ingredients
1 lb ground beef (85/15 or 90/10)
4 medium Yukon Gold or Russet potatoes, diced small
1 small red bell pepper, diced
1/2 small green bell pepper, diced
1 small onion, finely chopped
2 cloves garlic, minced
2 tbsp olive oil or beef fat
1 tsp smoked paprika
1/2 tsp ground cumin
1/2 tsp chili powder (optional)
1/2 tsp black pepper
1 tsp salt
1 tbsp Worcestershire sauce
2 green onions, thinly sliced
Optional: shredded cheese, hot sauce, sour cream
Instructions
1. Peel (optional) and dice the potatoes into small, even cubes. Parboil them in salted water for about 5 minutes until just fork-tender but not mushy. Drain well and set aside to dry.
2. Heat a large skillet over medium-high heat. Add the ground beef and break it apart using a wooden spoon. Cook until fully browned, about 6–8 minutes. Drain excess grease, leaving about 1 tablespoon in the pan. Remove the beef and set aside.
3. In the same pan, add a little olive oil if needed. Sauté the onion and garlic for 2–3 minutes until softened. Add bell peppers and cook another 3–4 minutes.
4. Push veggies to one side, add more oil if needed. Spread potatoes in a single layer and let them cook undisturbed for 5–6 minutes. Flip and repeat until golden and crisp.
5. Add the beef back in. Sprinkle smoked paprika, cumin, chili powder, salt, pepper, and Worcestershire sauce. Stir to combine and cook for another 3–5 minutes.
6. Taste and adjust seasoning. Turn off heat, garnish with green onions. Optionally top with shredded cheese and let it melt before serving.

Swap in sweet potatoes for a nutritious twist—just dice them small and crisp well.
To save time, skip parboiling by dicing potatoes extra small and cooking them longer.
