Ingredients

  • pounds Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons balsamic vinegar
  • 1½ tablespoons honey
  • 1 teaspoon Dijon mustard (optional)
  • 1 small garlic clove, finely minced (optional)
  • Red pepper flakes (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Trim and halve the Brussels sprouts. Pat them completely dry.
  3. Toss the sprouts with olive oil, salt, and pepper in a large bowl.
  4. Spread them cut-side down on a parchment-lined baking sheet without overcrowding.
  5. Roast for 20–25 minutes, flipping halfway, until golden and crispy.
  6. Prepare the glaze: In a small saucepan, combine balsamic vinegar, honey, and Dijon mustard (optional). Simmer for 2–3 minutes until slightly thickened. Stir in garlic if using.
  7. Toss roasted Brussels sprouts with the warm glaze immediately after baking.
  8. Serve hot, sprinkled with red pepper flakes if desired.
