2 boneless skinless chicken breasts

1 cup all-purpose flour

2 large eggs

1 ½ cups panko breadcrumbs

½ cup grated Parmesan cheese

Vegetable oil for frying

2 tablespoons unsalted butter

4 cloves garlic minced

1 cup heavy cream

¾ cup grated Parmesan cheese

½ teaspoon Cajun seasoning

10 ounces fettuccine

Salt for boiling water

Instructions

1. Pat the chicken chunks dry with paper towels and season with salt and pepper.

2. Set up three bowls: one with flour, one with beaten eggs, and one with a mix of panko, Parmesan, garlic powder, and paprika.

3. Dredge chicken in flour, dip in egg, and press into breadcrumb mixture until coated. Let rest 10 minutes.

4. Boil salted water and cook fettuccine until al dente. Drain and reserve ½ cup pasta water.

5. Heat oil in a skillet to 350°F and fry chicken in batches until golden, about 3–4 minutes per side. Transfer to wire rack.
