Ingredients
For the Shrimp Cakes:
- 1 lb raw shrimp, peeled and deveined
- 1/2 cup breadcrumbs (panko or plain)
- 1 large egg
- 1/4 cup red bell pepper, finely diced
- 2 green onions, finely chopped
- 2 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 2 tsp lemon zest
- 2 cloves garlic, minced
- 1/4 tsp paprika
- Salt and black pepper to taste
- 2 tbsp fresh parsley, chopped
- Oil for frying
For the Lemon Garlic Sauce:
- 1/4 cup mayonnaise
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 small garlic clove, minced
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Pat shrimp dry. Roughly chop half and pulse the other half in a food processor until finely minced. Combine both in a bowl.
- Add breadcrumbs, egg, bell pepper, green onions, mayo, mustard, lemon zest, garlic, paprika, parsley, salt, and pepper. Mix until just combined.
- Chill the mixture for 10–15 minutes.
- Shape into small patties (2–3 tbsp each), about 1/2 inch thick.
- Heat oil in a skillet over medium heat. Cook patties in batches, 3–4 minutes per side until golden and cooked through.
- For the sauce, whisk all ingredients in a bowl. Chill until serving.
- Serve shrimp cakes warm with lemon garlic sauce.
