Ingredients

6 cups peeled and diced Russet potatoes

1 medium yellow onion, finely chopped

3 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese

6 slices cooked bacon, crumbled

2 tablespoons butter

1 teaspoon dried thyme

Salt and pepper to taste

Instructions

1. Wash, peel, and dice the potatoes evenly. Chop the onion and mince the garlic. Pre-cook and crumble the bacon if using.

2. Add potatoes, onions, garlic, thyme, salt, and pepper to the crock pot. Pour in the chicken broth and dot with butter.

3. Cover and cook on low for 7–8 hours or high for 4–5 hours until potatoes are tender.

4. Once cooked, use a potato masher for a chunkier texture or an immersion blender for a creamier consistency.

5. Stir in heavy cream, cheddar cheese, and sour cream. Cook an additional 15–20 minutes until cheese is melted and soup is creamy.

Notes

For a vegetarian version, substitute chicken broth with vegetable broth and omit bacon.

To thicken the soup naturally, mash more of the cooked potatoes or blend partially.

Add cream and cheese only at the end to prevent curdling or separation.
