This Crockpot Cheesy Chicken Spaghetti is the ultimate comfort food. Juicy shredded chicken is slow-cooked with cream cheese, cheddar, and cream of chicken soup, then tossed with spaghetti for a creamy, cheesy, family-friendly dinner. It’s low-effort, rich in flavor, and perfect for leftovers.


Ingredients

  • 2 boneless skinless chicken breasts
  • 8 oz spaghetti (about half a box), cooked separately
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (8 oz) block cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • 1/2 cup chicken broth
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper to taste
  • Optional: 1 can Rotel, 1/2 cup diced bell peppers or mushrooms

 



Instructions

  1. Lightly grease the crockpot insert.
  2. Place chicken breasts at the bottom and season with garlic powder, onion powder, salt, and pepper.
  3. Spread cream of chicken soup over the chicken.
  4. Add cubed cream cheese on top.
  5. Pour chicken broth around the sides.
  6. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  7. Once cooked, remove chicken and shred with two forks.
  8. Return shredded chicken to the crockpot and stir well.
  9. Cook spaghetti separately according to package directions.
  10. Drain and stir the pasta into the cheesy chicken mixture.
  11. Add shredded cheddar and mix until fully melted and incorporated.
  12. Let sit on WARM for 10–15 minutes before serving.
