Ingredients

6 medium Yukon Gold or Russet potatoes, thinly sliced

2 cups shredded sharp cheddar cheese

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

3 tablespoons unsalted butter, melted

1/2 cup finely chopped onion (optional)

1/2 teaspoon garlic powder

1/2 teaspoon black pepper

1 tablespoon chopped fresh parsley (optional, for garnish)


Instructions

1. Wash, peel (if desired), and slice potatoes into thin, even rounds (1/8 to 1/4 inch thick).

2. In a large mixing bowl, stir together cream of chicken soup, sour cream, melted butter, shredded cheddar cheese, garlic powder, and black pepper until smooth.

3. Grease the crockpot with nonstick spray. Layer sliced potatoes and cheese mixture, alternating until all ingredients are used. Finish with a layer of sauce.

4. Cover and cook on low for 5 to 6 hours, or on high for 3 to 4 hours, until potatoes are fork-tender and cheese is bubbly.
