Ingredients

1 lb ground beef

1 medium yellow onion, diced

2 carrots, peeled and diced

2 stalks celery, diced

3 cloves garlic, minced

1 can (15 oz) diced tomatoes with juice

1 can (15 oz) tomato sauce

4 cups beef broth

1 can (15 oz) red kidney beans, drained and rinsed

1 can (15 oz) cannellini beans, drained and rinsed

1 cup ditalini pasta

1 tbsp Italian seasoning

Salt and pepper, to taste

2 tbsp fresh parsley, chopped

Parmesan cheese, for garnish (optional)


Instructions

1. Brown the ground beef in a skillet over medium heat, breaking it apart. Drain excess fat.

2. Transfer the cooked beef to a crockpot.

3. Add onion, carrots, celery, garlic, diced tomatoes, tomato sauce, beef broth, kidney beans, and cannellini beans. Stir to combine.

4. Season with Italian seasoning, salt, and pepper.

5. Cover and cook on low for 7–8 hours or high for 4–5 hours.

6. About 20–30 minutes before serving, stir in the ditalini pasta. Cook until pasta is al dente.

7. Taste and adjust seasoning as needed.

8. Serve hot, garnished with fresh parsley and Parmesan if desired.

Notes

For best results, cook the pasta separately if you plan on freezing leftovers.

You can swap ground beef for Italian sausage or ground turkey.

Stir in fresh spinach at the end for extra greens.
