Ingredients
2 cups sliced cucumber
1 cup sliced radishes
1/2 cup sour cream
1 tablespoon fresh lemon juice
2 tablespoons chopped fresh dill
2 green onions, finely sliced
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Wash and slice cucumbers and radishes thinly.
2. Place the sliced vegetables in a large bowl and toss gently.
3. Add chopped green onions and fresh dill.
4. In a separate bowl, whisk together sour cream, lemon juice, salt, and pepper.
5. Pour the dressing over the vegetables and mix gently until well coated.
6. Chill in the refrigerator for 10–15 minutes before serving.
Notes
Best served fresh.
Store in an airtight container in the refrigerator for up to 2 days.
You can substitute Greek yogurt for a lighter version.
