Ingredients

Banana Cake Layers

  • 2 cups all-purpose flour
  • 1½ teaspoons baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon nutmeg (optional)
  • ½ cup unsalted butter, softened
  • ½ cup vegetable oil
  • 1 cup granulated sugar
  • ½ cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • ½ cup sour cream
  • 1¾ cups mashed ripe bananas (about 4 bananas)

Caramel Filling & Topping

  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter
  • ½ cup heavy cream
  • ½ teaspoon sea salt (optional)
  • 1 teaspoon vanilla extract

Garnish

  • 12 ripe bananas, sliced
  • ½ to ¾ cup whole pecans, toasted
  • Extra caramel sauce (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans. Line with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a separate large bowl, beat butter and oil until smooth. Add granulated and brown sugars; cream until fluffy.
  4. Add eggs one at a time, beating well. Mix in vanilla extract and sour cream.
  5. Stir in mashed bananas.
  6. Add dry ingredients in batches, mixing until just combined.
  7. Divide batter evenly between prepared pans and bake for 28–32 minutes. Cool completely.
  8. For caramel: Melt sugar in saucepan over medium heat, stirring constantly until amber.
  9. Add butter and cream carefully, then stir in salt and vanilla. Simmer until thickened.
  10. Place one cake layer on a plate, spread caramel, then top with second cake layer.
  11. Pour caramel over top and allow it to drip down sides.
  12. Garnish with banana slices and toasted pecans. Chill briefly before serving.
