Ingredients

1 lb ground beef

1 cup long-grain white rice

1 medium yellow onion, finely diced

3 cloves garlic, minced

1 bell pepper, diced

2 cups beef broth

1 cup crushed tomatoes or tomato sauce

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon dried oregano

1/4 teaspoon red pepper flakes

Salt and pepper to taste

1 cup shredded cheddar or Monterey Jack cheese

Fresh parsley or green onions, chopped


Instructions

1. Heat a large skillet over medium heat. Add olive oil if needed, then sauté onion and bell pepper for 3–4 minutes.

2. Add minced garlic and cook for 30 seconds until fragrant.

3. Add ground beef and cook until browned, breaking it apart with a spoon.

4. Season with paprika, cumin, oregano, red pepper flakes, salt and pepper.

5. Stir in crushed tomatoes and uncooked rice until well combined.

6. Pour in beef broth and bring the mixture to a light boil.

7. Reduce heat to low, cover, and simmer for 18–22 minutes until rice is tender.

8. Sprinkle cheese on top, cover, and allow it to melt.

9. Garnish with parsley or green onions and serve hot.

Notes

For a creamier texture, stir in a splash of heavy cream or sour cream before serving.

Add frozen peas or corn during the last 5 minutes for extra color and nutrition.

Ground turkey or chicken can replace beef for a lighter variation.
