Ingredients
- 2½ to 3 pounds beef chuck roast, trimmed of visible fat
- 2 tablespoons olive oil
- 1 teaspoon black pepper
- ½ teaspoon sea salt (optional)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 tablespoon tomato paste
- 1 cup low-sodium beef broth
- ½ cup red wine (or more broth)
- 4 large carrots, peeled and chunked
- 1½ pounds baby potatoes, halved
- 1 large yellow onion, sliced
- 3 cloves garlic, minced
- 2 sprigs fresh rosemary (or 1 tsp dried)
- 2 sprigs fresh thyme (or 1 tsp dried)
- 1 bay leaf
- Fresh parsley, chopped for garnish (optional)
Instructions
- Season the beef with black pepper, salt, garlic powder, onion powder, and paprika.
- Sear the beef on all sides in olive oil in a Dutch oven until golden brown. Remove and set aside.
- Sauté the onions in the same pot. Add garlic and cook briefly. Stir in tomato paste.
- Deglaze the pot with red wine or broth, scraping up brown bits.
- Return the beef to the pot. Add broth, carrots, potatoes, and herbs.
- Cover and cook at 300°F (150°C) for 3–3½ hours until beef is tender.
- Remove bay leaf and herb stems. Shred beef slightly.
- Garnish with fresh parsley and serve hot.
