Description

This soft, golden-crusted bread is loaded with melted cheese and savory Italian herbs, making it a perfect companion to any meal or a delightful snack on its own. With its rich aroma and gooey texture, each slice brings comforting warmth and bold flavor.


Ingredients

For the Dough:

  • 3 1/2 cups all-purpose flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 1/4 cups warm water (100–110°F)
  • 2 tbsp olive oil
  • 1 tsp sugar
  • 1 1/2 tsp salt

For the Filling:

  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp garlic powder
  • 1/4 tsp crushed red pepper flakes (optional)

For the Topping:

  • 2 tbsp melted butter or olive oil
  • 1 tbsp chopped fresh parsley
  • Pinch of sea salt or flaky salt

Instructions

  1. In a large mixing bowl, combine warm water, sugar, and yeast. Let sit 5–10 minutes until frothy.
  2. Add flour, salt, and olive oil to the mixture. Stir, then knead until dough is smooth (8–10 minutes by hand or 6–7 minutes in stand mixer).
  3. Place dough in a lightly oiled bowl. Cover and let rise 1 to 1 1/2 hours until doubled in size.
  4. In a bowl, mix mozzarella, parmesan, oregano, basil, garlic powder, and red pepper flakes.
  5. Punch down dough and roll out into a 1/2-inch thick rectangle.
  6. Sprinkle cheese mixture evenly over dough. Roll into a log or fold for loaf shape. Pinch to seal.
  7. Place dough in a greased loaf pan. Cover and let rise another 30–40 minutes.
  8. Preheat oven to 375°F. Brush dough with melted butter/olive oil and sprinkle with salt.
  9. Bake for 30–35 minutes, until golden brown and sounds hollow when tapped.
  10. Cool slightly, garnish with fresh parsley, and serve warm.
