Ingredients
1 lb ground beef
1 packet taco seasoning
2/3 cup water
1 can (10 oz) diced tomatoes with green chilies, drained
1 cup salsa
1 can (15 oz) black beans, drained and rinsed
2 cups shredded cheddar cheese
2 cups shredded Monterey Jack cheese
1 bag (9.75 oz) Nacho Cheese Doritos, lightly crushed
Sour cream
Diced tomatoes
Chopped cilantro
Chopped onions or green onions
Instructions
1. In a large skillet over medium-high heat, cook the ground beef until browned and crumbly, about 6–8 minutes.
2. Drain excess grease, then stir in taco seasoning, water, diced tomatoes, and salsa. Simmer for 5–7 minutes until thickened.
3. If using black beans, stir them in and mix until heated through.
4. Preheat oven to 350°F (175°C).
5. Lightly grease a 9×13-inch baking dish and spread a layer of crushed Doritos at the bottom.
6. Spoon half of the beef mixture over the chips, then sprinkle with half of both cheeses.
7. Add another layer of Doritos, then the remaining beef, and top with the rest of the cheese.
8. Bake uncovered for 20–25 minutes or until the cheese is melted and bubbly.
9. Remove from oven and let sit for 5 minutes. Top with sour cream, diced tomatoes, onions, and cilantro before serving.
Notes
Use chunky salsa and drain tomatoes well to avoid a soggy casserole.
For extra creaminess, mix in 2–3 tablespoons of sour cream or cream cheese into the beef layer.
Shredding your own cheese makes a big difference in melt quality and taste.
