Ingredients
1 pound ground beef
1 packet taco seasoning
1 head romaine lettuce, chopped
1 cup cherry tomatoes, halved
1/2 small red onion, thinly sliced
1 cup shredded cheddar cheese
2 cups Nacho Cheese Doritos, lightly crushed
1/2 cup Catalina dressing (plus more to taste)
Instructions
1. Heat a skillet over medium heat. Add the ground beef and cook until browned, about 6–8 minutes. Drain excess fat.
2. Stir in taco seasoning and 1/4 cup water. Simmer 2–3 minutes until thickened. Let cool slightly.
3. Wash and chop the romaine lettuce. Halve tomatoes and slice red onion.
4. In a large bowl, combine lettuce, tomatoes, onion, and shredded cheddar.
5. Add cooled beef and gently toss.
6. Just before serving, crush Doritos and sprinkle over the salad.
7. Drizzle with Catalina dressing, toss gently, and serve immediately.
Notes
For best texture, add Doritos and dressing only right before serving.
Ground turkey, grilled chicken, or black beans work well as substitutes.
