Ingredients

500g boneless chicken breast or thigh, thinly sliced

2 tbsp cornflour

2 tbsp all-purpose flour

1 egg

1 tsp soy sauce

1/2 tsp black pepper

Salt to taste

Oil for deep frying

1 tbsp oil (for stir-frying)

1 tbsp garlic, finely chopped

1 tbsp ginger, finely chopped

2 to 3 dried red chilies

1/2 onion, thinly sliced

1/2 green bell pepper, thinly sliced (optional)

1/4 cup tomato ketchup

2 tbsp red chili sauce

1 tbsp soy sauce

1 tbsp vinegar

1 tbsp brown sugar or honey

2 tbsp water

Salt to taste

Spring onions, sliced (for garnish)

Sesame seeds (optional, for garnish)


Instructions

1. In a bowl, mix chicken with cornflour, all-purpose flour, egg, soy sauce, pepper, and salt. Marinate for 20 minutes.

2. Heat oil and fry the chicken strips in batches until golden and crispy. Drain on paper towels.

3. In a wok, heat 1 tbsp oil. Sauté garlic, ginger, and dried red chilies until aromatic.

4. Add sliced onions and bell peppers; stir-fry for 1-2 minutes.

5. Stir in ketchup, chili sauce, soy sauce, vinegar, sugar or honey, and water. Let it simmer until thick and glossy.

6. Toss the fried chicken into the sauce and coat evenly. Stir-fry for 1-2 minutes.

7. Garnish with spring onions and sesame seeds. Serve hot with rice or noodles.

Notes

Marinate the chicken well for flavor and coating adhesion.

Don’t add fried chicken to the sauce until right before serving to retain crispiness.

Adjust spice by reducing red chilies or chili sauce for milder versions.
