Ingredients
4 medium bell peppers
1 lb ground beef
1 cup cooked white rice
1 small onion, chopped
2 cloves garlic, minced
1 cup diced tomatoes
1/2 cup tomato sauce
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheese (cheddar or mozzarella)
Instructions
1. Preheat oven to 375°F (190°C).
2. Cut the tops off the bell peppers and remove seeds and membranes. Rinse and set upright in a baking dish.
3. In a skillet, sauté onions in oil until soft. Add garlic and cook for 30 seconds.
4. Add ground beef and cook until browned. Drain excess fat.
5. Stir in diced tomatoes, tomato sauce, cooked rice, Italian seasoning, salt, and pepper. Simmer for 5–7 minutes.
6. Spoon the mixture into the bell peppers, pressing gently to fill.
7. Cover dish with foil and bake for 30 minutes.
8. Remove foil, top each pepper with cheese, and bake uncovered for 10–15 minutes.
9. Let rest 5 minutes before serving. Garnish with parsley if desired.
